10 Jan Little Ravens Ginger Beer
Ginger beer 3 Ravens style! Inspired by the wild ginger beer your grandparents (probably) used to make – but with a little more science (and beer!) Our ginger beer undergoes a short souring process for gentle acidity, followed by a mixed fermentation with farmhouse ale and lager yeast strains. Citrus-like notes from kettle and dry-hop additions combine with bitter and sweet orange to highlight the sweet, fruity flavours of ginger (added both dried, and freshly-juiced throughout the process) while finishing lightly malty and with a hint of spice.
Malts: Pale, Vienna, CaraHell, Acidulated
Hops: Magnum (bittering), Sorachi Ace (whirlpool), Mosaic (dry-hop)
Yeast: French Saison, Continental Lager
Souring bacteria: Lactobacillus Brevis
Other: Freshly juiced ginger, dried ginger, bitter and sweet orange peel
