NAT RAV 2020 BLOODY SHIRAZ NEGRONI

A blend of bitter, golden and red barrel aged mixed ferment beers aged on gin-soaked red grape skins and orange zest. Inspired by the Negroni cocktail.

MANGO CREAMSICLE

Based on our Original Sour Beer “Acid”, this seasonal variation includes rolled wheat and lactose to provide an extra silky body, vanilla and french oak to enhance the fluffy mouthfeel and creamy flavour, and is fermented with mango puree for an experience that will take you back to summer treats from the milk bar freezer.

HAY, HOPS & HOREHOUND

A bitter and aromatic farmhouse ale brewed in collaboration with the legends at Woodstock Flour in NSW utilising grains, straw and weeds from their farm. Aggressively hopped with aged hops at five stages of the brewing process, then heavily dry hopped immediately prior to packaging with fresh, whole cone experimental Australian hop HPA-016.

A celebration of the dankest hops currently on offer. Galaxy, Strata, Zappa and an early-harvest of Amarillo combine with Australian passionfruit juice for an over-ripe, tropical expression with minimal bitterness and maximum purp.

BARLEY APERA

RICH, RARE, LUXURIOUS

A fortified barley based beverage brewed using techniques inspired by fortified wine producers. Maderisation, fractional blending (solera) and fortification (sherry) are employed to create a dessert-like beverage that is packaged without carbonation and intended to be served as you would sherry or port.

METHODE RAVENS 2019

An annual blend celebrating the evolution and expression of our house mixed culture. The 2019 vintage marries three batches for nuanced acid, funk and fruit complexity and great ageing potential. Bottled with an extremely low level of carbonation in July 2019, this beer can be drunk still while young, or cellared carefully as carbonation develops over the nexts few years.

CREME BRULEE SHAKE

CUSTARD, TOFFEE, THICC

The beer that kicked off our Shake series – “Salted Caramel Shake” –  featured (among other things) a ridiculous amount of crystal malt and was surprisingly well received. After its 11th run through the brewhouse, we decided it needed a rest. 7 Shakes, 22 batches, and 18 months later, Creme Brulee Shake emerges as the older, more mature sibling to Salted Caramel Shake – with the caramel fudge sweetness dialed back and a darker toffee note introduced, with more of a custard vibe to the flavour and mouthfeel. We triple dry-hopped it with the autotune of hazy hops – Simcoe, Citra, Mosaic & Galaxy – so we can still pretend it’s an IPA.

NITRO SALTED CARAMEL BROWN ALE

We love malt. Toasted malts. Roasted malts. Caramelised malts. Red malt, brown malt, sweet, bready, fudgey malts. What better way to celebrate our love of malt than in a brown ale – with rock salt added to enhance the flavour, and nitrogen gas for a silky head and (combined with less carbon dioxide) to increase mouthfeel.

ODIN’S BREW

RICH, CREAMY, DECADENT

Brewed in collaboration with Melbourne’s Viking-themed and (much like ourselves) Norse-inspired restaurant Mjolner, this is the beer version of Mjolner’s signature cocktail “Odin’s Brew” – a spin on the Espresso Martini made with Muesli-syrup, coffee liqueur, goats milk and garnished with chocolate and tonka bean. Our beer interpretation features rye and oats for texture (and muesli-like flavours), lactose for milky sweetness, roasted malts for coffee and chocolate as well as cacao nibs, tonka bean and vanilla for a decadent beer almost as rich and lush as the cocktail.

ESPRESSO QUARANTINI

DARK AGAVE SYRUP, COFFEE, FRENCH OAK

An easy-drinking brown porter featuring lightly roasted, toasted and caramelised malts and infused with espresso-roast coffee. Dark Agave Syrup adds a light caramel and a hint of fruitiness. Vic Secret and Mosaic hops are used for complimentary herbal spice and berry notes, and the beer is fermented with a fruity English yeast on french oak chips, contributing cherry and vanilla.

BLACK STOUT

CHOCOLATE, OATMEAL, SILKY

A staple of the 3 Ravens range since 2003, “Black” is a smooth and silky stout with mild roast character and a creamy texture derived from oats. Now seasonally brewed to coincide with early winter, Black was given a facelift in line with our focus on fresh local malt and hops and to enhance drinkability. Black, back in 2020.

GUAVA JUICY

GUAVA, TROPICAL, JUICY

Guava is one of our favourite hop characteristics that pops up in the Juicy IPA series, so it seemed only natural to brew a version focussing on this note. We’ve combined Strata, Enigma and Mosaic hops with a serious load (around 10%) of pureed Australian guava added in two stages during fermentation.

PACIFIC RED ALE

TROPICAL, TOFFEE, BERRIES

Brewed in collaboration with Footscray institution Bar Josephine, we reimagined our former flagship British-style beer “Bronze” (later known as “English”) through a modern Australian lens – the result something best described as a Pacific Red Ale. Higher in ABV than our old special bitter and with a leaner, darker and “redder” malt bill, it’s hopped with Australian Galaxy and Ella as well as German Hallertau Blanc, and fermented with the London Ale yeast that defined the old Bronze.

TROPICAL FRUIT CUP GOSE

Inspired by everyone’s favourite thirst quencher, we squeezed everything into this cup. Passionfruit, pineapple, lemon and orange as well as fruity Strata hops and sea salt to create an incredibly bright, fruity and refreshing spin on our Original Sour Beer. We used the great taste of real fruit to make the beer that you like best.

THICC SHAKE

VANILLA, CREAMY, THICC

When we were kids, one of life’s most important quests was that for the perfect vanilla milkshake. Now that we’re adults we’ve come to realise that the perfect milkshake contains booze and an obscene amount of hops.

 

For our latest Milkshake IPA we started with a smooth and creamy base of wheat, oats and dextrin malts. Then we dialed up the thicc!

Milk sugar and vanilla are added in generous servings, the likes of which our inner child could only dream of. Hallertau Blanc, Galaxy and Cryo Mosaic hops are added at five stages to produce a balanced bitterness and ripe fruit top notes.

PASTRY SOUR SERIES: REDGUM HONEY, WATTLESEED & MACADAMIA

Brewed in collaboration with Tivoli Road Bakery and designed to showcase the unique characteristics of the bakery’s rye culture. It features a high proportion of rye and was fermented with rye leaven in whisky barrels to maximise the grape-like characteristics of the culture. After nine months of maturation the beer tasted like an almond croissant and thus the “Pastry Sour Series” was born. This variant was fermented with redgum honey, toasted wattleseed and macadamia.

NAT RAV SERIES: YARRA GLEN RIESLING

A blend of two beers conceived at Carwyn Cellars 2018 “Art of the Blend” event. The first beer, a mixed-culture golden sour ale brewed in July 2016, was barrel aged for 8 months, re-fermented on fresh pressed whole-bunch Riesling skins, then returned to barrel for a further 17 months. This was blended with a 15 month old aromatic wild ale and refermented in bottle.

A blend of dry saison, barrel aged mixed culture farmhouse ale and an aromatic wild ale, refermented together with apricot puree. Conceived and blended in collaboration with Brouhaha and bottled February 2019 at an average age of 19 months.

WILD RAVENS SERIES: METHODE RAVENS 2018

An homage to the great lambic blenders of Belgium, this beer marries young and old beer spanning three years. The blend is predominantly a single barrel of 21-month-old aromatic wild ale – bright, zesty, aromatic and mouthwatering – with a small portion of 9-month-old and 26-month-old beer selected to complement and round out the blend.

NAT RAV: GRAMPIANS PINOT GRIS 2018

An Australian farmhouse ale brewed with local malt, grain, sugar and hops in collaboration with The Commons (Portland, Oregon) during Good Beer Week in May of 2017. Fermented with a Belgian farmhouse yeast and aged in old wine barrels with our house mixed culture for 12 months. The beer was then refermented on Grampians-grown Pinot Gris skins for 6 weeks before final refermentation in bottle.

STRAWBERRIES & CREAM SHAKE

Cake. Pavlova. Pancakes. Wimbledon. What do all of these things have in common? They’re all much better with strawberries and cream. For our latest Milkshake IPA we started with a smooth and creamy base of wheat, oats and light crystal malts. Pureed strawberries, milk sugar and vanilla are added to conjure thoughts of those little red and white swirly candies, and Huel Melon, Mosaic and Cashmere hops are added at five stages to provide a light bitterness and complementary ripe fruit and berry-like top notes.

When it’s time to lager we will always lager hard (lager hard). Bright, clean, fresh, balanced and highly sessionable, this easy drinking beer is a celebration of everything we love about pale lager and features only the finest raw materials including Czech yeast, German malt, American hops plus a hefty dose of premium Australian malt and hops from our favourite producers. First brewed in 2008 to celebrate our 5th birthday, 55 is our unique take on the American-style Pale Ale brewed with 5 grains and 5 hops. Over the decade since its release “55” became our flagship beer and a fan favourite for many Australians that witnessed the birth and growth of the Australian craft beer scene (although we would have called it “boutique” back then). We’ve restored this cult classic to its former glory and are rolling it out of the garage for a spin around the block the first time in two and a half years – for old time’s sake!

Bottled with an extremely low level of carbonation in July 2019, this beer can be drunk still while young, or cellared carefully as carbonation develops over the nexts few years.

CREME BRULEE SHAKE

The beer that kicked off our Shake series – “Salted Caramel Shake” –  featured (among other things) a ridiculous amount of crystal malt and was surprisingly well received. After its 11th run through the brewhouse we decided it needed a rest. 7 Shakes, 22 batches, and 18 months later, Creme Brulee Shake emerges as the older, more mature sibling to Salted Caramel Shake – with the caramel fudge sweetness dialed back and a darker toffee note introduced, with more of a custard vibe to the flavour and mouthfeel. We triple dry hopped it with the autotune of hazy hops – Simcoe, Citra, Mosaic & Galaxy – so we can still pretend it’s an IPA.

ODIN’S BREW

Brewed in collaboration with Melbourne’s Viking-themed and (much like ourselves) Norse-inspired restaurant Mjolner, this is the beer version of Mjolner’s signature cocktail “Odin’s Brew” – a spin on the Espresso Martini made with Muesli-syrup, coffee liqueur, goats milk and garnished with chocolate and tonka bean. Our beer interpretation features rye and oats for texture (and muesli-like flavours), lactose for milky sweetness, roasted malts for coffee and chocolate as well as cacao nibs, tonka bean and vanilla for a decadent beer almost as rich and lush as the cocktail.

Vic Secret and Mosaic hops are used for complimentary herbal spice and berry notes, and the beer is fermented with a fruity English yeast on french oak chips, contributing cherry and vanilla.

A staple of the 3 Ravens range since 2003, “Black” is a smooth and silky stout with mild roast character and a creamy texture derived from oats. Now seasonally brewed to coincide with early winter, Black was given a facelift in line with our focus on fresh local malt and hops and to enhance drinkability. Black, back in 2020.

PACIFIC RED ALE

Brewed in collaboration with Footscray institution Bar Josephine, we reimagined our former flagship British-style beer “Bronze” (later known as “English”) through a modern Australian lens – the result something best described as a Pacific Red Ale. Higher in ABV than our old special bitter and with a leaner, darker and “redder” malt bill, it’s hopped with Australian Galaxy and Ella as well as German Hallertau Blanc, and fermented with the London Ale yeast that defined the old Bronze.

TROPICAL FRUIT CUP GOSE

Inspired by everyone’s favourite thirst quencher, we squeezed everything into this cup. Passionfruit, pineapple, lemon and orange as well as fruity Strata hops and sea salt to create an incredibly bright, fruity and refreshing spin on our Original Sour Beer.

We used the great taste of real fruit to make the beer that you like best.

THICC SHAKE

When we were kids, one of life’s most important quests was that for the perfect vanilla milkshake. Now that we’re adults we’ve come to realise that the perfect milkshake contains booze and an obscene amount of hops.

For our latest Milkshake IPA we started with a smooth and creamy base of wheat, oats and dextrin malts. Then we dialed up the thicc!

Milk sugar and vanilla are added in generous servings, the likes of which our inner child could only dream of. Hallertau Blanc, Galaxy and Cryo Mosaic hops are added at five stages to produce a balanced bitterness and ripe fruit top notes.

Nat Rav Series: Yarra Glen Riesling 2017

A blend of two beers conceived at Carwyn Cellars 2018 “Art of the Blend” event. The first beer, a mixed-culture golden sour ale brewed in July 2016, was barrel aged for 8 months, re-fermented on fresh pressed whole-bunch Riesling skins, then returned to barrel for a further 17 months. This was blended with a 15 month old aromatic wild ale and refermented in bottle. Bottled August 2018 at an average age of 22 months.

Wild Ravens Series: Methode Ravens 2018

An homage to the great lambic blenders of Belgium, this beer marries young and old beer spanning three years. The blend is predominantly a single barrel of 21-month-old aromatic wild ale – bright, zesty, aromatic and mouthwatering – with a small portion of 9-month-old and 26-month-old beer selected to complement and round out the blend.

An Australian farmhouse ale brewed with local malt, grain, sugar and hops in collaboration with The Commons (Portland, Oregon) during Good Beer Week in May of 2017. Fermented with a Belgian farmhouse yeast and aged in old wine barrels with our house mixed culture for 12 months. The beer was then refermented on Grampians-grown Pinot Gris skins for 6 weeks before final refermentation in bottle.

For our latest Milkshake IPA we started with a smooth and creamy base of wheat, oats and light crystal malts. Pureed strawberries, milk sugar and vanilla are added to conjure thoughts of those little red and white swirly candies, and Huel Melon, Mosaic and Cashmere hops are added at five stages to provide a light bitterness and complementary ripe fruit and berry-like top notes.

Mosaic and Bramling Cross hops were chosen for their complimentary berry notes, as was the coffee – a natural process Honduran Pacas varietal from Nahun Fernandez in Santa Barbara, roasted to perfection by our mates at Proud Mary Coffee and added to the beer post fermentation and within minutes of being ground.
