We thought it would be fun to revisit our low haze “Pulp Free” NEIPA but with techniques borrowed from Brut IPA. Juicy Brut is an exploration of opposing styles brewed with protein rich triticale and oats, fruity yeast, amylase enzymes and is triple dry-hopped for a bone dry, tropical hop punch.

3 Ravens annual birthday tradition is inspired by the Solera method of fractional blending. House-malted barley, aromatic Australian hops and fruity English yeast are combined with a barrel aged stock ale (dating back to 2011) for an intriguing blend of fresh and aged flavours. Winter in Melbourne can be, at times, unrelenting. Wallowing in it motivates and inspires us. To commemorate the 2018 hibernal solstice, we rested an intensely rich, dry stout in freshly emptied French oak whisky casks for a brooding homage to midwinter. Bottled May 2018. A complex and easy-drinking sour red beer created by blending a portion of wild, barrel aged mixed fermentation ale into a light and fruity fast soured red-hued base. Fruity esters, sweet malt, toasted oak, lactic- and acetic-acid combine to give this bright, tart and refreshing beer subtle hints of balsamic vinegar and pie cherry.

The Druid is as arcane and eldritch as the name suggests, and was conjured to mimic the characteristics of Pedro Ximenez. This vintage, rested in freshly emptied whisky casks, features vanillin oak and bright whisky notes with lush sweet malt and dried fruit esters to give the impression of fortified wine.

QUEEN’S SECRET

Brewed from a blend of Australian barley malts including the heritage variety Schooner, Australian cane sugar, time, Australian “Vic Secret” hops and the historic Melbourne Ale Yeast – isolated in the early 20th century and recently made available again commercially. A light colour and body showcase the fruity yeast and distinct tropical notes from five distinct and generous hop additions throughout the boil, fermentation and conditioning.
