This release features a variety rarely seen on its own – Cabernet Franc – shared with us by our mate JonJo at Cre Wines. We’ve used these grapes in the past, and loved the Black Forest Cake (chocolate and cherry) character that they provided. For this years release we’ve selected 3 base beers from 4 barrels to ferment the skins with to provide a range of complimentary oxidative (sherry and port-like), winter fruit (cherry, quince, prune, cranberry) and complex deep, dark notes (cola, leather, almond, raspberry balsamic, pepper). The result is a dry and complex beer with a refreshing balance of tannin and acidity.
