A blend of very dark, strong and aggressively hopped barley wine style ales brewed between 2012 and 2019. From 2017 - 2019 the base beer (stock ale) was aged in French oak ex shiraz barriques, in 2020 it was transferred into American oak ex malt whisky hogsheads, and in 2020 it was transferred into first fill American oak ex rye whisky barriques. (Essentially triple barrel aged).
Inspired by the Solera method and the centuries old brewing tradition of “Keeping Ale”. First brewed in 2012 and stored in French-oak wine barrels, this beer blends various vintages of barley wine to encourage complex oxidative characteristics reminiscent of sake or fortified wine. Intentionally still, we recommend savouring a small glass after dinner, with cheese or whenever you would consider drinking Sherry or Port.

Alcohol: 10% ABV (2018, 2019), 16% ABV (2020), 17% (2021)
Bitterness: 60 IBU
Aroma: Prune, muscatelle, rancio (pecan, library, pencil tin), orange marmalade, sake lees
Flavour: Sticky date pudding, oak spice, marshmallow, fig
Mouthfeel: Medium-full, smooth, rich, warming, soft tannin
